The Mallorcan recipes books are full of simple, but very tasty dishes. The tumbet is a summary of the basic pillars of the island kitchen: simple ingredients from the summer vegetable garden. The best example of a Mediterranean diet is both healthy and appetizing.

Thus it is a modification of the Catalan samfaina or the French ratatouille and a relative of the Greek musaka.
