And there’s one traditional dish that you really shouldn’t miss - the lobster stew known as caldereta de llagosta. Although you can find it on the menu in other restaurants on the island, the most popular caldereta is from Fornells. Head to this beautiful fishing village in the north of the island and give yourself up to its charms. Take a seat at any terrace along its picturesque seafront and get ready to be spoiled - the best is yet to come.Caldereta is a seasonal dish, only prepared during the lobster season between 1 April and 31 August. It’s a deceptively simple dish made with lobsters from the island and finely chopped vegetables (tomatoes, peppers, onions, garlic and parsley), water and salt, and served in a clay pot. Some cooks add a finishing touch of chopped almonds, egg, or sometimes a piece of sobrasada sausage.
